Pigeon with chorizo, peppers and feta cheese
Mediterranean flavours add a delicious twist to this pigeon recipe, which is both seasonal and simple to make
If you have a freezer full of pigeon or you’ve just bagged a few in the hide, put them to good use with this delicious Mediterranean take on pigeon. Serve the pigeon with chorizo, peppers and feta for a perfect summer’s evening quick meal.
What you need:
- 2 pigeon breasts
- 2 small chorizos
- 1 jar pepperdew peppers
- 2 tbsp orange juice
- 2 tbsp olive oil
- 5 cubes feta cheese
- salt and pepper
- balsamic vinegar
How to cook:
- Put the chorizo and peppers in a pan. Then add 2tsp of juice from the pepper jar along with the orange juice and olive oil
- Heat until it thickens, then set aside
- Seaon the pigeon breasts. Pan-fry for two minutes each side and then rest for a couple of minutes
- Cube the feta chees and sprinkle with salt and pepper
- Place everything on the plate, putting the pigeon in the middle
